So here&#8217;s a hearty, one pan dish so simple even a big dumb Polack like me can make it.<\/p>\n<p><strong>Roasted Potatoes and Kielbasa <\/strong><\/p>\n<p>Ingredients:<br \/>\n3 lbs small red potatoes, cut into to 1\/2 inch slices<br \/>\n2 Tbsp extra light olive oil (or any high heat cooking oil)<br \/>\n2 Tbsp minced fresh parsley, or 1\/2 Tbsp dried parsley<br \/>\n1 tsp sea salt<br \/>\n2 garlic cloves, pressed<br \/>\n1 lb kielbasa, or sausage cut into 3\/4 inch rounds<\/p>\n<p>Do:<br \/>\nPreheat Oven to 400F. Line a large baking sheet with parchment paper, or Silpat. I use foil.<\/p>\n<p>1. Place potatoes and kielbasa in a large mixing bowl.<\/p>\n<p>2. Add parsley, 2 pressed garlic cloves, 1 tsp sea salt, and 2 Tbsp olive oil and toss to combine. Spread onto baking sheet and bake at 400F for 45-50 minutes or until potatoes are browned an crisp. Stir halfway through baking with a spatula to ensure even browning.<\/p>\n<p>Garnish with fresh parsley if desired and serve warm.<\/p>\n<p>Crusty bread and a bold red wine, and good company to go with.
