I loved it, because the griddle cakes had a crispy edge to them and really soaked up the butter and maple syrup \u2013 but that\u2019s just me. I was a kid. Kids are always hungry. Fix some good sausages to go with these bad boys, and I\u2019m back in the kitchen with the snow outside flying and the wind howling around the chimney.<\/p>\n<p>And yes, we had a real fireplace that could hold a real fire, not these video things for people who are afraid of the Real World. (No, that photo is not a couple corn cakes. It&#8217;s pancakes. Sorry.)<\/p>\n<p>Note: you need both baking soda and baking powder for this.<\/p>\n<p>So here goes:<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<p>1 cup of boiling water<\/p>\n<p>\u00be cup of yello corn meal<\/p>\n<p>1 cup of buttermilk or sour milk<\/p>\n<p>2 eggs<\/p>\n<p>1 cup sifted all-purpose flour<\/p>\n<p>2 teaspoons baking powder<\/p>\n<p>1 teaspoon salt<\/p>\n<p>\u00bc teaspoon baking soda<\/p>\n<p>\u00bc cup salad oil<\/p>\n<p><strong>Directions:<\/strong><\/p>\n<p>&#8211; Pour water over the corn meal and stir until it is thick.<\/p>\n<p>&#8211; Add milk and beat in the eggs<\/p>\n<p>&#8211; Sift together the flour, baking powder, salt, and baking soda,<\/p>\n<p>&#8211; Add dry ingredients (above) to the corn-meal mixture<\/p>\n<p>&#8211; Stir in the salad oil<\/p>\n<p>&#8211; Bake on a hot, ungreased griddle<\/p>\n<p>Makes about 14 pancakes<\/p>\n<p>I\u2019m assuming that you are to drop these by the large spoonful (or dipper) onto the griddle, but I would start with a test pancake first. \u00a0And by \u201cbake\u201d, the cookbook means that you stand there, monitor the cornmeal cakes and flip them once to fully cook. If I recall correctly, the edges should be a tiny bit crispy.<\/p>\n<p>These are good when hot and fresh, with the addition of melty butter and maple syrup (the real stuff)\u00a0 to swim in. And of course, good sausages to add to the mix.
