In this case, a whole broiler or fryer is the start of the recipe. This should provide 10 servings, which means you can invite extra people to share your meal.<\/p>\n<p>This one comes to us from Taste of Home, at this link:<\/p>\n<p><a href=\"https:\/\/www.tasteofhome.com\/recipes\/chicken-and-sausage-stew\/\">https:\/\/www.tasteofhome.com\/recipes\/chicken-and-sausage-stew\/<\/a><\/p>\n<p><strong>Chicken and Sausage Stew<\/strong><\/p>\n<p><strong>Ingredients\u201d<\/strong><\/p>\n<ul>\n<li>1 broiler\/fryer chicken (3 to 4 pounds)<\/li>\n<li>2 quarts water<\/li>\n<li>2 pounds hot Italian sausage links (<strong>hot<\/strong> is optional; if you need less heat, use mild or sweet Italian sausage)<\/li>\n<li>6 bacon strips<\/li>\n<li>2 garlic cloves, minced<\/li>\n<li>1 tablespoon minced fresh parsley<\/li>\n<li>1 teaspoon dried oregano<\/li>\n<li>1 can (16 ounces) crushed tomatoes<\/li>\n<li>1 can (8 ounces) tomato sauce<\/li>\n<li>8 ounces elbow macaroni, cooked and drained<\/li>\n<li>Salt and pepper to taste<\/li>\n<li>Additional minced fresh parsley, optional<\/li>\n<\/ul>\n<p><strong>Directions:<\/strong><\/p>\n<ul>\n<li>Place the chicken and water in a Dutch oven; bring to a boil. Skim fat. Reduce heat; cover and simmer 30-45 minutes or until chicken is tender. Meanwhile, puncture skins of sausages; place in a small saucepan and cover with water. Bring to a boil; cook for 20 to 30 minutes or until no longer pink. Drain. In a large skillet, brown sausages on all sides. Cool and cut into bite-sized pieces; set aside.<\/li>\n<li>In small skillet, cook bacon over medium heat until crisp. Using a slotted spoon, remove to paper towels; drain, reserving 2 tablespoons drippings. Crumble bacon and set aside. In the drippings, saute garlic until tender.<\/li>\n<li>Remove chicken from Dutch oven; cool. Drain broth; skim fat. Reserve 5 cups broth. Remove chicken from bones; cut into bite-sized pieces.<\/li>\n<li>Pour reserved chicken broth into the Dutch oven. Add the chicken, sausage, bacon, garlic, parsley and oregano. Bring to a boil. Reduce heat; cover and simmer for 10 to 15 minutes. Stir in the tomatoes, tomato sauce, macaroni, salt and pepper; simmer 10 minutes longer or until heated through. If desired, sprinkle with additional parsley.<\/li>\n<\/ul>\n<p>As always, adjust seasonings to suit your needs and personal taste. This one seems like a hearty, filling meal that will serve and please a lot of people. Remember to get that nice, crusty loaf at the store (unless you can make it yourself) and include the jardinera and other condiments when you set the table.
