It is cold and wet and rainy in my kingdom, and this kind of dish, which is hearty, filling and tasty, is perfect on a rainy and cold spring day. Besides, since you aren&#8217;t using up the entire bottle of Guinness, you can enjoy a half-pint of it while the stew cooks.<\/p>\n<p>As always, adjust the seasonings to your particular taste. Whether you add the Guinness and \/ or wine or not, you&#8217;ll still be left with a lot of heartiness to warm you on cold nights.<\/p>\n<p>Prep time: 20 min<\/p>\n<p>Cook time: 6 hr 20 min<\/p>\n<p>Total time: 6 hr 40 min<\/p>\n<p>Serves: 4<\/p>\n<p><strong>Ingredients<\/strong><\/p>\n<ul>\n<li>Beef stew meat &#8211; 1 lb<\/li>\n<li>Garlic &#8211; 3 cloves, minced<\/li>\n<li>Onions &#8211; 1, chopped<\/li>\n<li>Carrots &#8211; 2, chopped<\/li>\n<li>Potatoes, russet &#8211; 2, peeled and chopped<\/li>\n<li>Flour (opt) &#8211; 2 Tbsp<\/li>\n<li>Cooking oil (opt) &#8211; 1 Tbsp<\/li>\n<li>Tomato paste &#8211; 2 Tbsp<\/li>\n<li>Soy sauce &#8211; 1 Tbsp<\/li>\n<li>Beef stock \/ broth &#8211; 2 to 3 cups<\/li>\n<li>Guinness (opt) &#8211; 1\/4 cup<\/li>\n<li>Red wine (opt) &#8211; 1\/4 cup<\/li>\n<li>Bay leaves &#8211; 2<\/li>\n<li>Black pepper &#8211; 1\/4 tsp<\/li>\n<li>Peas (opt) &#8211; 1 cup<\/li>\n<\/ul>\n<p><strong>Instructions:<\/strong><\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<ol>\n<li>Beef \u2013 Sprinkle with salt and pepper and <a href=\"https:\/\/vimeo.com\/61975253\">tenderize<\/a>.<\/li>\n<li>Garlic \/ <a href=\"https:\/\/vimeo.com\/57300127\">Onions<\/a> \/ <a href=\"https:\/\/vimeo.com\/56814851\">Carrots<\/a> \u2013 Prep as directed. (Can be done up to 3 days ahead) (Hint: you can use baby carrots and boiler onions for this part)<\/li>\n<li><a href=\"https:\/\/vimeo.com\/67479920\">Potatoes<\/a> \u2013 Prep as directed.\u00a0 (Hint: try baby potatoes, or small red potatoes which hold up well in this kind of cookery.)<\/li>\n<\/ol>\n<p><strong>Cooking Instructions:<br \/>\n<\/strong><\/p>\n<ol>\n<li>Optional step: Toss meat with flour. Heat a <a href=\"https:\/\/bit.ly\/CSBuy0Skillet\">skillet<\/a>\u00a0over medium-high heat. Add oil and then sear meat until browned on the outside.<\/li>\n<li>While meat is browning, mix together tomato paste, soy sauce, beef stock (use more if you like it more soupy than stewy) and Guinness &amp; red wine (if using) in slow cooker.<\/li>\n<li>Transfer meat (browned or not) to <a href=\"https:\/\/amzn.to\/1ssdvDw\">slow cooker<\/a>. Add garlic, onions, carrots, potatoes, bay leaves, and black pepper.<\/li>\n<li>Cook on low for 6 to 7 hours or high for 3 to 4 until meat is falling apart and tender.<\/li>\n<li>If using peas, microwave for ~1 minute and then fold them into stew.<\/li>\n<li>Remove bay leaves.
